Start with one dish. Stay curious.

A few Chinese names turn a menu from an obstacle into an invitation.

01

Beijing: 北京烤鸭 · roast duck

Make one meal a proper occasion, rather than something hurried between sights. Ask about portion size and how the dish is served before ordering. For a different meal, look for 炸酱面 (zhajiangmian), noodles with soybean-paste sauce.

02

Shanghai: 小笼包 · xiaolongbao

These soup-filled dumplings are one introduction to the city’s food culture. 生煎 (shengjian), pan-fried buns, offer another. Order modestly at first, and allow hot fillings to cool before eating. Recipes and fillings vary between kitchens.

03

Keep the details personal

Save the Chinese dish name, but ask the restaurant about ingredients, allergens and dietary needs. A familiar English translation cannot establish what is in the kitchen. These are dishes to explore, not restaurant endorsements or dietary guarantees.
